Nobile di Montepulciano DOCG wine
DESCRIPTION: structured, balanced, intense wine with floral scent of violet, fruity plum jam, with spicy notes of black pepper.
GRAPES: Sangiovese called Montepulciano gentle blackthorn, black Canaiolo, Colorino, Mammolo.
AGING: 2 years of aging in large Slavonian oak barrels. It is completed with 1 year of bottle aging, before being put on the market.
PAIRING: it goes well with very aged pecorino and goat cheeses, Cinta Senese cured meats, egg pasta topped with Chianina meat sauce, wild boar and game in general, "Fiorentina" grilled (medium-blood cooking), meat roast lamb, veal, and pork. If the wine has been bottled for at least 3 years, it can also be paired with truffle-based dishes.
